Spiced Mixed Nuts

This recipe is courtesy of our very own GLRC team member Scott & his wonderful wife Jen. These are perfect for snacking & holiday entertaining and best of all you can get everything you need package free in store!

Spicy Smoked (or Roasted) Nuts
6 cups mixed raw nuts (cashews, pecans and almonds)
1/4 cup melted Earth Balance (or butter)
1/4 cup brown sugar
2 Tbsp. fine sea salt
1-3 tsp. cayenne pepper
2 tsp. each cinnamon, cumin, paprika (smoked if roasting in oven), coriander, chipotle seasoning
1 tsp. rubbed thyme

1. Mix nuts in a large bowl. Mix sugar, salt and spices in a small bowl.

2. Drizzle melted butter over nuts and then mix in half of the seasoning. Once well combined add the rest of the seasoning mix and stir well.
3. Heat smoker (or bbq, or oven) to 225F. Pour nuts onto baking tray, or baking dish and smoke or roast for 1 1/2 - 2 hours, stirring well every 30 minutes.

4. Let cool completely before storing in an air tight container.
