Rice Bowl with Tahini Dressing
What you put in the bowl is secondary; this dressing will taste delicious on anything. It would taste delicious on a salad of greens, but the addition of the chicken and the rice make it into a tasty meal.
Ingredients:
1/2 cup of cooked rice (I used Jasmine this time)
1/2 cup cooked protein (I used leftover barbecued chicken breast)
1/2 cup cooked greens (I used sautéed baby bok choy)
1/4 cup diced feta
1/4 cup pickled onion
For the dressing:
1/4 cup tahini
1 garlic clove, minced
3 Tbsp Lemon Juice
1 Tbsp Oil (I used Camelina Oil, but Olive Oil works too)
1 Tbsp Maple Syrup
1 Tsp Toasted Sesame Oil
1/4 Tsp Sea Salt
1/4 Tsp Smoked Paprika
2 Tbsp Cold Water
Instructions:
1. Whisk together all of the dressing ingredients except for the water.
2. Add a teaspoon at a time of cold water to the dressing until you've reached your desired consistency.
3. Layer the bowl ingredients in a bowl.
4. Top with the dressing.
