Pumpkin Cake with Cream Cheese Icing
This recipe is definitely a crowd pleaser and has been requested every time I bring it anywhere! I'm not sure where the original recipe came from but I have had it for years and it is sure to be a hit. You can also make this recipe into cupcakes :) You can find everything but the cream cheese in store.
Ingredients:
2 c. all purpose flour
2 c. white sugar
4 eggs
1 c. coconut oil, melted
2 c. pumpkin puree
1 tsp vanilla
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
1/2 tsp salt
Icing:
250g package cream cheese
1 tsp vanilla
1/2 c butter or butter substitute
2 - 2.5 c. icing sugar
Instructions:
Combine sugar, oil, vanilla & eggs and beat well. Add pumpkin puree and mix until incorporated.
Combine dry ingredients and add to wet ingredients and mix well.
Grease & flour baking pan of choice, add batter and bake at 350 degrees for approx. 30 min or until a toothpick inserted in the centre comes out clean.
For cupcakes bake for approximately 18 minutes.
