Miso Sesame Glazed Brussel Sprouts
Ingredients:
2 Tbsp. white miso paste
2 Tbsp. Dijon mustard
2 Tbsp. rice vinegar
1 Tbsp. toasted sesame oil
1 Tbsp. Tamari
1/2 tsp. crushed chilis
1/4 cup plus 2 Tbsp. avocado oil
1 lb. Brussels sprouts, trimmed and halved
1/4 tsp. Mediterranean sea salt
1/4 cup Panko breadcrumbs
1/4 cup grated Parmesan cheese
2 Tbsp. toasted sesame seeds (I did a mixture of black and white)
Directions:
1. In a blender, combine miso paste, Dijon mustard, rice vinegar, sesame oil, soy sauce, and chili flakes; blend on low speed until smooth. Increase speed to medium-high and gradually add ¼ cup oil.
2. Preheat the oven broiler to HIGH.
3. Heat remaining 2 Tbsp. oil in a large oven-safe skillet over medium-high heat. Add Brussels sprouts and cook for 7-8 minutes, stirring occasionally, until browned and tender. Season with salt.
4. In a medium bowl, mix panko, Parmesan, and toasted sesame seeds.
5. Pour the miso-sesame mixture over the Brussels sprouts, stir to coat, then top with the panko mixture.
6. Place the skillet in the oven on the upper center rack and broil for about 2 minutes, until the top is golden brown. Watch closely to prevent burning.
7. Remove from oven, stir, and serve immediately.
