Five Spice Cookies
Ingredients:
3 cups All Purpose Flour (Canadian or Gluten Free)
2 teaspoons Baking Soda
1 tablespoon Five Spice Powder
1/2 teaspoon salt
1 1/2 sticks/170g of unsalted butter, softened
1 1/4 cups Dark Brown Sugar
1 large Egg
1/3 cup Molasses
1 tablespoon Vanilla Extract
1/4 cup Organic Cane Sugar
Instructions:
1. In a medium bowl, mix together Flour, Baking soda, Five Spice and Salt.
2. In a stand mixer, beat the Butter and Brown Sugar until fluffy. Add the Egg, Molasses and Vanilla and mix until combined and fluffy.
3. With the mixer running, slowly add in the flour mixture until there are no pockets of flour. Cover the bowl (I used a silicone lid), and refrigerate for 1 hour, or overnight.
4. Preheat over to 350 degrees. Line two baking sheets with silicone baking mats. Place the cane sugar in a shallow bowl.
5. One at a time, portion of 2 tablespoons of dough, roll into a ball, gently dab in the sugar and then place on the baking sheet, sugar side up. You should have enough dough for 24 cookies.
6. Bake both sheets in the oven at the same time for 18 minutes, swapping the sheets on the top and bottom rack half way through.
7. Once cooked, let cookies rest on the baking sheets until cool.
