Cranberry Orange Mini Loaves
Ingredients:
2 cups All Purpose Flour (I used gluten free)
3 Tsp Baking Powder
1/2 Tsp Salt
1/2 Cup White Sugar
1/3 Cup Canola Oil or another vegetable oil
8 oz. Sour Cream
2 eggs, slightly beaten
1 cup frozen cranberries
2 Tbsp grated orange peel (approx. one large orange)
1/2 Cup Icing Sugar
2 Tbsp Orange Juice, from peeled orange
Instructions:
1. Preheat oven to 350 degrees.
2. Grease three 5x3 loaf pans on all sides.
3. In a medium bowl, mix flour, baking powder and salt.
4. In a second bowl, mix sugar, canola oil and orange peel until well blended. Stir in the sour cream and eggs.
5. Add sugar mixture to flour mixture and stir gently until blended. Gently fold in 1/2 cup frozen cranberries.
6. Divide batter evenly among loaf pans. Top with remaining frozen cranberries.
7. Bake for 45-50 minutes, or until a toothpick inserted in the centre comes out clean.
8. Allow to cool in pans.
9. Mix together icing sugar and orange juice to make a glaze. Add more juice if needed. Once the loaves are cool, drizzle glaze across them.
