Chili

*For a vegan or vegetarian option - sub TVP, Beyond Ground or meat substitute of choice*

*You can also use dried beans that have been soaked and cooked instead of canned*

*Add a cup of pumpkin puree to add some extra vitamins to the dish*

Ingredients:

1.5 lbs Ground Beef

1 tbsp Olive oil

3 Cloves Garlic, minced

1 Sweet onion, diced

1 Red Pepper, diced

1 Jar spaghetti Sauce

1 - 796ml Can Diced Tomatoes

1 - 540 ml Can Kidney Beans, drained and rinsed

1 - 540ml Can Chick Peas, drained and rinsed

2 tbsp Mexican Chili Powder

2 tsp Cumin

1/2 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1 tbsp chipotle spice

1 tsp fine sea salt

ground pepper to taste

Instructions:

Sautee garlic and onion until fragrant and translucent in 1 tbsp oil of choice. Add red pepper and Sautee a few minutes longer.

Add ground beef and cook until no longer pink.

Add in spaghetti sauce, diced tomatoes, beans and spices. Simmer on low for 30 minutes stirring frequently.

Top with your favourite toppings: greek yogurt, cheese, green onions etc.
