Calrose sushi rice is a medium-grain rice that is known for its slightly sticky texture when cooked, making it ideal for sushi and other dishes.
To cook, rinse 2 cups of rice well. Then combine rice and 3 cups of water in a heavy saucepan. Bring to a boil, then cover, reduce heat, and simmer for 15 minutes. Remove from heat and let sit covered for 15 more minutes.
