Tricolour Greek Quinoa Salad
This Greek quinoa salad is a staple in our home during the summer months. It's quick, easy & makes a great lunch throughout the week or side at dinner time!
Ingredients:
1 c. cooked & cooled tricolour quinoa
2 c. sliced cherry or grape tomatoes
1 small red onion or half a medium diced
1/2 large cucumber diced
1 sweet pepper diced (red, yellow or orange)
1/2 c. crumbled feta cheese
Gently mix all of the above ingredients. Top with dressing & mix again until ingredients are coated with dressing.
Dressing: Mix all ingredients well or shake in a small mason jar with a lid.
1/4 c. garlic olive oil (or plain)
3 tbsp fresh squeezed lemon juice
1 tbsp red wine vinegar
1/4 tsp dried oregano
1 clove garlic finely minced
Salt & Pepper to taste
