Homemade Cheese

 

This was my first attempt at homemade cheese. I was nervous that it would be too difficult, but I was wrong. There are only a few steps and the entire process took 45 minutes. Afterwards, I had delicious mozarella cheese.

Ingredients:
2L whole milk - I used two bottles of Mistyglen Dairy Milk
1/2 cup white vinegar
sprinkle of fine salt

Instructions:
1. Add milk to a medium sized pot and place on the stove. Heat over medium heat until your milk has reached 120 degrees fahrenheit, then turn off heat.
2. Pour vinegar into heated milk and stir for 30 seconds. The milk will quickly thicken as it curdles.
3. Return the lid to the pot and allow to cool on the stove for 15 minutes.
4. Remove the cheese curd from the pot and form a ball, squeezing out all liquid. If available, place the curds in cheesecloth and wring out.
5. Place the cheese on a microwave safe dish and microwave for 15-20 seconds, until hot but not burning to the touch. Sprinkle with salt. Then use your hands to stretch and fold the cheese several times, until it hardens.
6. When the cheese cools, repeat the heating and folding process a second time.
7. Roll the cheese into a ball and place in an ice bath for 15 minutes. Afterwards, your cheese is ready.
