Beyond Meat Sausage Rolls


2 cloves garlic, minced
3 strips of plant-based bacon, cooked and chopped
4 beyond meat original sausages, defrosted
3/4 cup panko breadcrumbs
1 egg
1/2 tsp salt
Black pepper
2 sheets puff pastry, thawed
1 egg, lightly whisked
1 tbsp everything bagel seasoning


1. Place garlic, bacon, sausage, breadcrumbs, egg, salt and pepper in a bowl and use your hands to mix well.
2. Lay out the puff pastry on a floured work surface and cut each piece in half so that you have four long rectangles of pastry. 
3. Place the first piece of pastry on a parchment paper-lined baking sheet. Use a spoon to remove 1/4 of mix from the bowl and roll into a long log the length of the pastry. Wrap the pastry around it, ensuring the mix is tight and compact, without gaps. Then roll up the pastry, finishing with the seam side down.
4. Repeat with the 3 remaining pieces of pastry.
5. Place the rolls in the freezer for 30 minutes.
6. Remove the rolls from the freezer and slice into 2-inch lengths. Place back on the lined baking sheet.
7. Use a pastry brush to brush the egg wash onto the tops of the rolls. Sprinkle with everything bagel seasoning if desired.
8. Bake rolls at 350 F for 25-30 minutes or air fry for 12 minutes.
9. Cool slightly on trays. Serve hot or warm.
